What is Gongura?
Gongura – also known as Sorrel leaves, Pulicha Keerai in Tamil, or Ambadi in Hindi – is a leafy green plant with a distinctly sour, tangy flavour. It is one of the most important ingredients in Andhra Pradesh cuisine and is almost impossible to find outside of South Indian communities.
In Andhra households, Gongura is used in chutneys, pickles, curries, meat dishes and rice preparations. The leaves have a natural tartness that cuts through the richness of meat and spices – creating a flavour profile that is completely unlike any other South Indian ingredient.
Gongura is sometimes called “the pride of Andhra” – and once you taste a well-made Gongura dish, you’ll understand why.
What is Gongura Biryani?
Gongura Biryani is a slow-cooked dum biryani in which the meat is marinated and cooked with Gongura leaves, whole spices and aromatic basmati rice. The Gongura gives the biryani a distinctive tangy, slightly sour note that balances beautifully with the richness of the meat and the warmth of the spices.
It is an Andhra speciality – and one of the most sought-after biryanis among people who know their Indian regional food. Most Indian restaurants in New Jersey do not serve it. At Desi Dhamaka Lawrenceville, we have made it one of our signature dishes.

Gongura Chicken Biryani
Tender chicken marinated with fresh Gongura leaves, aromatic spices and cooked using the traditional dum method with fragrant basmati rice. The result is a biryani with a beautiful tangy depth that you will not find anywhere else in the Lawrenceville or Princeton NJ area.
Gongura Mutton Biryani
Slow-cooked mutton with Gongura leaves and a rich Andhra masala – our Gongura Mutton Biryani is a more intense, deeply flavoured experience. The sourness of the Gongura and the earthiness of the slow-cooked mutton create a combination that is truly memorable.

Why is Gongura Biryani Hard to Find in New Jersey?
Gongura is a highly regional ingredient – it is deeply embedded in Andhra and Telangana food culture but is virtually unknown outside of those communities. Most Indian restaurants in New Jersey – even those serving Hyderabadi biryani – do not work with Gongura because it requires sourcing fresh leaves, knowledge of Andhra cooking techniques, and a customer base that appreciates authentic regional Indian food.
